Barbara Gibbons, LivingAfterWLS Food Editor is the voice behind our LivingAfterWLS Recipe of the Week. Each Sunday you will receive a free email featuring healthy and delicious recipes that are easy to make and family friendly. Known as "Celadon" in the LivingAfterWLS Neighborhood, Barbara is a gastric bypass patient. Although she battled obesity for much of her life she raised 4 healthy-weight children as she actively pursued nutritional health and physical fitness. Read more about Barbara in her own words:
Life is amazing! Just when you think you have it all figured out, you come to another fork in the road. On July 31, 2007, I took the most memorable fork in the road of my life. I had RNY gastric bypass surgery and my life took a decided uphill turn. Having found the LivingAfterWLS website weeks before surgery, I was very well prepared for the days and weeks to come. Since then, I have become a fixture in the Community Kitchen and love to interact with the entire neighborhood in all forums.
Being obese for the majority of my adult life taught me about the negative energy that surrounds obese people in our society. Having bypass surgery began to teach me the positives. Through interaction with people in the neighborhood who have the same issues, I have learned to work hard, follow the rules, play hard, and dedicate myself to getting the word out that we indeed are not alone.
With a background of reading and researching diet and nutrition, I have learned how to substitute, omit, and add in ingredients that make meals both palate pleasing and healthier. There is no issue too boring or too complicated for me to search out every facet of it and become well-versed in that subject. I embrace classes on diet and nutrition and find invaluable information on the internet. I hoard data because I know that it will be of use to someone, sometime. My passion is to help people of all ages understand that good nutrition and balanced meals can be satisfying and delicious without the dinner table being a battleground. To achieve this goal, I intend to flood the LivingAfterWLS website with information, facts, tips, recipes, and instructions to enable everyone to plan and create nutritionally sound meals.
I am a woman with a new lease on life, a renewed sense of purpose, and a new understanding that for me, life truly did begin after 50!
