Crockpot Spaghetti Dinner

I love this meal and even the kids will enjoy it with spaghetti squash – Mother Nature’s pasta. If you do use a processed sauce be sure to check for hidden sugars. Some sauces have fewer sugar grams than others.

Ingredients:
1 lb. lean ground beef (ground turkey or pork are fine substitutes)
1 small onion, coarsely chopped
4 oz. sliced mushrooms or 1 4-ounce can sliced mushrooms, drained
1/2 cup shredded carrots
2 celery stalks, coarsely chopped

1 envelope dry spaghetti sauce mix
8 oz. can tomato sauce
4 1/2 c. tomato juice or V-8
or
1 jar favorite prepared spaghetti sauce

1 spaghetti squash

Shredded low-fat cheese

Directions:
In a skillet over medium-high heat brown ground beef. Drain fat from beef. Add onion, mushrooms, carrots and celery to meat mixture. Place meat and vegetables in crockpot, add spaghetti sauce mix, tomato sauce and tomato juice or prepared sauce. Stir to combine. Cover and cook on low all day.

One-hour before serving clean & prepare spaghetti squash. Bake in 350 degree oven for 40 minutes. Pull strands from squash with forks and serve topped with meat sauce and shredded cheese. Delicious!
