Mamas Meat Loaf

When making meat loaf, place all the ingredients except the ground meat in a large bowl, and then crumble the meat over the mixture. Use a spoon or your hands to knead the seasonings into the meat.

Prep: 16 minutes, Cook: 70 minutes

Ingredients:
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
3 tablespoons minced fresh parsley
1 teaspoon black pepper
3/4 teaspoon salt
2 garlic cloves, minced
1 large egg, lightly beaten
1 (1-ounce) slice white bread, torn into small pieces

1 1/2 pounds ground round (beef)
Cooking spray
1/3 cup ketchup

Directions:
1. Preheat oven to 350ºF.
2. Combine first 8 ingredients (onion through bread) in a large bowl, tossing to moisten bread. Crumble beef over onion mixture; stir just until blended. Shape meat mixture into an 8x4-inch loaf on a broiler pan coated with cooking spray. Brush ketchup over meat loaf. Bake at 350º for 1 hour and 10 minutes or until a meat thermometer registers 160º.
3. Let stand 10 minutes before slicing. Yield: 6 servings (serving size: 1 slice).

Kaye’s note: If you have difficulty with beef try ground pork or ground turkey or a combination of the two. This is a very good lunch the next day.
