Pumpkin Pie Mousse
Ingredients: 2 (1 ounce) boxes sugar-free instant vanilla pudding mix 2 cups milk (I use fat free evaporated- it makes it very rich) 1 cup canned pumpkin 1 teaspoon pumpkin pie spice 1/4 teaspoon nutmeg 1/4 teaspoon ginger 1/2 teaspoon cinnamon
Directions: Put all ingredients into blender. Mix well and pour into small dessert dishes. Refrigerate.
I also use the cheesecake flavored pudding for an even better taste
Consider putting this mousse in a pie crust!
