    Barbecue Baked Lentils

    This recipe is actually very good when cooked in a smoker alongside any meat you need to cook 'low and slow'. It also works well when done in a crock pot. However you try it, it makes a great new way to enjoy baked beans! In our house, we add a bit of liquid smoke and hot sauce or red chili flakes for heat.

    Ingredients:
    3 cups water
    2 cups lentils -- dried, brown
    1/2 teaspoon salt -- divided
    1 cup onion -- diced
    2/3 cup ketchup, low sodium
    1/3 cup sugar free maple syrup
    1/4 cup mustard
    1/2 teaspoon ground ginger
    1/4 teaspoon ground allspice
    1/4 teaspoon black pepper

    Directions:
    Preheat oven to 350°.

    Combine water, lentils, and 1/4 teaspoon salt in a large saucepan. Bring to a boil; cover, reduce heat to medium-low, and simmer 20 minutes. Drain lentils in a colander over a bowl, reserving 1 cup cooking liquid.

    Combine lentils and diced onion in an 11 x 7-inch baking dish. Combine 1/4 teaspoon salt, reserved cooking liquid, ketchup, and the remaining ingredients. Pour the ketchup mixture over the lentil mixture, stirring to combine. Bake at 350° for 1 hour.

    Yield: 8 servings (serving size: 3/4 cup)

    Per Serving: 202 Calories; 14g Protein; 1g Fat (3.8% calories from fat); 37g Carbohydrate; 16g Dietary Fiber; 0mg Cholesterol; 258mg Sodium.
