Chicken Ceaser Salad

It provides an abundance of protein from the chicken, is low in sodium, and is a quickly put together main dish. Makes 4 servings.

Ingredients:
3 Hearts of romaines
3 Boneless, skinless chicken breast, cut into big cubes
1/2 cup shredded Parmesan cheese
*Ken's light Caesar salad dressing
A few large croûtons

Directions:
Cut the hearts of romaines in to a bowl. Season the chicken with salt, pepper, garlic, cayenne pepper and cook the chicken breasts with a tablespoon of olive oil until done. I make sure that the chicken breast has browned nicely on both sides. I let the chicken breasts sit for a few minutes so they will stay juicy, then I cut them into large cubes, don't be shy. Sprinkle the cheese over the lettuce. mix in chicken chunks. Pour in dressing and mix. For the family sprinkle with croûtons and enjoy!

*Ken's salad dressings can be found with the other salad dressings. They has regular and lite versions. Use the lite, trust me, no one will know the difference. This dressing is the only dressing I have found that has a true homemade flavor.
