The plum sauce recipe is written to be used on boneless chicken thighs, but it equally delicious on whole roasted chicken as shown above.
Chicken with Plum Barbecue Sauce Broil or Grill: Fast and Delicious
This is an absolute favorite go-to recipe for me. The flavor is fresh and original, the nutritional score is great and it is quick, easy and company worthy. Does it get any better? If you can't find plum jam try substituting seedless raspberry jam or even apple jelly. (no-sugar added, of course!)
Ingredients:
1 (8 ounces) can no-salt added tomato sauce
1/3 cup plum jam (sugar free)
1 tablespoon cider vinegar
2 cloves garlic, minced
1/2 teaspoon red hot pepper sauce
1/2 teaspoon each ground ginger and salt
1 teaspoon each chili powder, ground cumin and coriander
8 boneless skinless chicken thighs
Directions:
In a medium saucepan, combine the tomato sauce, jam, vinegar, garlic, hot pepper sauce, ginger and salt. Bring to a boil. Reduce to a simmer, cover and cook for 10 minutes. Uncover and cook for 5 minutes or until the plum sauce is thick enough to coat a spoon and the flavors have blended. Cool to room temperature. Measure out 1/2 cup of the plum sauce and set aside; use the rest as a baste.
Preheat the broiler or the outdoor grill. In a small bowl stir together the chili powder, cumin, and coriander. Rub the chicken with the spice mixture. Broil or grill the chicken over high heat for 4 minutes per side. Brush with half of the basting mixture and broil for or grill for 5 more minutes. Turn the chicken again and baste with remaining sauce. Continue cooking until chicken tests done.
