Ingredients:
2 lbs chicken breast, no skin, no bone, R-T-C -- cooked and chopped
29 ounces canellini beans, canned -- 2 cans, rinsed and drained
3 cups low sodium chicken broth -- (3 to 4)
2 teaspoons italian seasoning -- (2 to 3)
Freshly ground black pepper
Salt
1 cup baby carrots -- finely chopped (or use shredded)
1 small onion -- chopped
1 cup celery -- finely chopped
1 tablespoon butter
1 tablespoon olive oil
Directions
In large pot, sautee carrots, celery and onions in butter and olive oil. When softened add all the other ingredients. Bring to a boil and simmer for 25 minutes while you get the rest of dinner made
