Tomato & Basil Saute’

Refreshingly Delicious

This is a recipe I make often though I don’t know the origin of it. It is easy, fresh and delcious with steak.

Ingredients:
1 pint cherry or grape tomatoes, rinsed
4 green onions, chopped using the white and some of the green
1 tablespoon olive oil
1 tablespoon balsamic vinegar
¼ cup fresh basil chopped (or ½ teaspoon dried) salt and pepper to taste

Heat the olive oil in a large skillet over medium heat. Add the onions and saute until soft. Add the tomatoes and saute' about 8 minutes or until soft but not mushy.

Remove from heat. Stir in balsamic vinegar and basil. Add salt and pepper to taste.

Serve warm.

A 1/2 cup serving Tomato Saute has 60 calories, 3.8 grams fat and 6.3 grams carbohydrate with 1.3 grams vegetable protein.
